On the border of Poronin and Biały Dunajec, on the fertile, green slopes with a view of Gubałówka and the Tatra Mountains, Bogdan Lassak has been grazing his herd for 15 years. It is not easy to reach his hut, as we need to go through the entire village and when the asphalt road is over, we have to go some 300 metres down along a field road. However, we will find there real bliss, a mug of żentyca, a bench in the shade of the apple trees and jokes told by baca. The production of oscypek is a complex process. Cheese treated by rennet should be formed, by soaking in hot water. To imprint a characteristic pattern, highlanders use oscypiorka, i.e. a wooden mold, which scypie i.e. splits. As it is easy to guess, this is what highlander cheese’s name comes from. Then, for 24 hours, oscypki are immersed in “broth” i.e. in brine, which extracts excessive water from them. Then, they are arranged on the shelf where for about 4-5 days they are smoked in cold spruce or pine smoke. Oscypki, beautifully arranged on the shelf between the rafters is a typical picture inside the huts. This may also be seen in the hut of Bogdan Lassak, who, although works as baca far away from the usual routes, cannot complain about the lack of tourists. He produces his oscypki upon request. Many times, he is visited by groups of a hundred people, and he tolds them about the process of producing smoked cheese and gives away some secrets. And this baca has many of them as his products have a unique taste. Baca in Bustryk worked a lot as juhas when he was young, following in the footsteps of one of his grandparents. During his work in the Bieszczady Mountains, he even tried to care for his sheep from the air. The first adventure with a hang-glider ended with a smashed nose and he lost any will to try once again. When taking care of his 250 sheep, in addition to juhas, he is also helped by small Slovak sheep dogs. The smallest, 4-months-old Bobik is said to deal best with the sheep.Bogdan Lassak continues the family traditions not only as baca. In the winter, just like his father and the other grandfather he earns extra as a stove fitter, installing tile stoves.
